Blender spaghetti sauce skips the peeling, seeding and chopping that fresh tomato sauce usually demands. Whole fresh tomatoes go into the blender raw with onion, garlic, tomato paste, red wine, a spoonful of molasses and dried herbs, and the smooth puree is then simmered on the stove until it thickens into a deep red sauce.
Each ingredient has a job. Tomato paste adds the concentrated flavor and body that fresh tomatoes lack, red wine gives depth, and molasses rounds off the acidity with a darker, less sweet note than sugar. The long simmer is not optional: it cooks the raw onion and garlic, drives off the alcohol and evaporates the extra water from the tomatoes.
Freshly blended tomatoes look pale, pink and foamy at first because of the air whipped into them. The foam subsides and the color deepens to brick red as the sauce cooks. Serve it over spaghetti, with homemade baked meatballs, or anywhere a smooth tomato sauce is needed.

Blender Spaghetti Sauce
Ingredients
Method
- Put about half of the tomatoes in the blender first, so there is juicy fruit next to the blades, then add the onion and garlic. Blend until smooth and pour into a large, heavy pot or Dutch oven (5 quarts or larger).
- Blend the remaining tomatoes with the tomato paste, red wine, molasses, basil, oregano, salt, black pepper and the red pepper flakes if using, until smooth. Do not fill the blender jar more than two-thirds full; work in three batches if the blender is small. Add to the pot.
- Stir the olive oil into the pot and add the bay leaf.
- Set the pot over medium-high heat and bring the sauce to a boil, stirring often. Reduce the heat to medium-low so the sauce bubbles gently.
- Simmer, partially covered to contain the splatters, for 50 to 60 minutes, stirring every 10 minutes or so and scraping the bottom of the pot. The sauce is ready when it has reduced by about a third, has turned from pink to deep red, mounds slightly on a spoon and no longer tastes of raw onion.
- Remove the bay leaf. Taste and adjust the salt. Use right away, or cool and store.
