Fresh Homemade Peanut Butter in a Vitamix Blender Recipe

Small open jar of fresh homemade peanut butter with roasted peanuts scattered beside it

Homemade peanut butter from a Vitamix or other high-powered blender needs only two ingredients: roasted unsalted peanuts and a small measure of sea salt. No oil goes in, and a spread that contains nothing beyond nuts and salt is also free of added preservatives.

The work is quick. The peanuts are blended on high for roughly a minute while the tamper pushes them down into the blades, and the finished spread is scraped into an airtight container. Starting with unsalted nuts keeps the salt level adjustable; for a one-ingredient version, buy roasted peanuts that are already salted and leave out the sea salt.

This small batch is sized for a 32 oz. wet container and makes about 1 cup. A bigger batch calls for the 64 oz. wet container and 3 cups of peanuts. Use the peanut butter anywhere the store-bought kind would go: spread on bagels, English muffins, toast or sandwiches, eaten with fruit, or blended into smoothies and milkshakes.

Fresh Homemade Peanut Butter (Vitamix)

Two-ingredient peanut butter made by blending roasted unsalted peanuts and sea salt on high in a Vitamix for about a minute. Makes about 1 cup, enough to fill an 8 to 10 ounce jar.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 8 servings (2 tablespoons each, about 1 cup)
Course: Condiment
Cuisine: American

Ingredients

  • 2 cups roasted unsalted peanuts
  • 1/4 teaspoon sea salt or to taste

Method

  1. Measure the peanuts into a 32 oz. blender container, sprinkle in the sea salt if using, and lock the lid in place.
  2. With the dial on Variable 1, start the blender. Turn the dial up gradually until it reaches Variable 10, then flip to HIGH.
  3. Work the tamper through the lid to keep forcing the nuts into the blades. After about one minute, or as soon as the motor’s pitch changes, stop the machine. Running it longer than needed risks overheating the blender.
  4. Lift off the lid and tamper, then scrape out the peanut butter and store it in an airtight container.

Notes

One batch makes about 1 cup, enough to fill an 8 to 10 ounce jar, or 8 servings of 2 tablespoons.
Salted dry roasted peanuts can stand in for the unsalted peanuts plus sea salt.
To make more at once, move up to a 64 oz. wet container and use 3 cups of peanuts, for about 1 1/2 cups of peanut butter.
Storage: keep the peanut butter in an airtight jar in the refrigerator and use it within 1 month. With no stabilizers, some oil may separate; stir it back in. It firms up when cold, so let it stand at room temperature for a few minutes before spreading.
